Watermelon Feta Mint Salad Cups are juicy, salty-sweet appetizers made with fresh watermelon, creamy feta, and mint. A refreshing and easy summer bite perfect for parties or light snacks.
Ingredients
16 cubes seedless watermelon, 1.5-inch thick, hollowed center
1 cup cucumber, finely diced
3/4 cup feta cheese, crumbled
3 tbsp fresh mint, chopped
2 tsp olive oil
1 tbsp red wine vinegar or lime juice
Salt and pepper to taste
Fresh mint leaves for garnish (optional)
Instructions
1. Cut watermelon into even-sized cubes (about 1.5 inches), then hollow out a small cavity using a melon baller or spoon.
2. In a medium bowl, combine diced cucumber, crumbled feta, chopped mint, olive oil, vinegar or lime juice, and a pinch of salt and pepper. Mix gently.
3. Using a spoon, fill each watermelon cup with the salad mixture.
4. Garnish each cup with a fresh mint leaf or a sprinkle of extra feta if desired.
5. Chill for 10–15 minutes before serving for best flavor.
6. Serve on a chilled platter and enjoy immediately.
Notes
Use seedless watermelon for best results.
For a vegan version, substitute feta with plant-based cheese or tofu.
Add a touch of honey or lime zest for extra flavor.
Make filling ahead but assemble cups right before serving to avoid sogginess.
