Description

This Summer Berry Poke Cake is a light, fruity, and refreshing dessert perfect for BBQs, potlucks, or any summer celebration.


Ingredients

Scale

1 box white or vanilla cake mix

1 (3 oz) box strawberry or raspberry flavored gelatin

1 cup boiling water

1/2 cup cold water

1 (8 oz) container whipped topping (Cool Whip)

1 cup fresh strawberries, sliced

1/2 cup raspberries

1/2 cup blueberries

Optional: fresh mint for garnish


Instructions

1. Bake cake according to package instructions in a 9×13-inch pan. Let cool.

2. Dissolve gelatin in 1 cup boiling water, then stir in 1/2 cup cold water.

3. Poke holes all over the cake using a spoon handle or straw.

4. Pour gelatin over the cake, allowing it to seep into holes. Refrigerate 2–3 hours.

5. Top with whipped topping and fresh berries.

6. Chill for 30 minutes or serve immediately.

Notes

This cake can be made up to 24 hours in advance.
