Smash Chicken Caesar Tacos bring together juicy seared chicken, crisp romaine, and creamy Caesar dressing in warm tortillas. A quick, satisfying dinner with a flavorful twist.
Ingredients
1 ½ pounds boneless, skinless chicken thighs
1 tbsp olive oil
1 tsp garlic powder
½ tsp smoked paprika
Salt and black pepper, to taste
4 cups chopped romaine lettuce
⅓ cup grated Parmesan cheese
¼ cup Caesar dressing
½ cup croutons (optional)
Fresh lemon wedges
6–8 small flour or corn tortillas
Extra Parmesan, for garnish
Fresh parsley or chives (optional)
Instructions
1. Pound the chicken thighs to even thickness and season with olive oil, garlic powder, paprika, salt, and pepper.
2. Heat a skillet or grill pan over medium-high and cook chicken for 4–5 minutes per side until done. Let rest, then slice.
3. Warm tortillas in a pan or directly over flame.
4. Toss romaine, Caesar dressing, Parmesan, and croutons together.
5. Assemble tacos: add chicken, salad, garnish with more Parmesan, herbs, and lemon juice.
Notes
Use corn tortillas for a gluten-free version.
For extra crunch, grill the tortillas.
Leftover chicken can be stored for up to 3 days.
