Description
A tropical and refreshing non-alcoholic mojito made with pineapple juice, coconut milk, mint, and lime. Perfect for summer!
Ingredients
1/2 cup pineapple juice
1/4 cup coconut milk
1/2 lime, juiced
10 fresh mint leaves
1/2 cup soda water or coconut water
Ice cubes
Optional garnishes: lime wedges, pineapple slice, mint sprig
Instructions
1. In a glass, muddle mint leaves with lime juice.
2. Add pineapple juice and coconut milk. Stir well.
3. Fill with ice and top with soda water or coconut water.
4. Garnish with lime, pineapple, and mint. Serve immediately.
Notes
To make ahead: Combine juices and coconut milk in advance. Add mint, ice, and soda water before serving.
You can replace coconut milk with almond milk or omit for a lighter version.
