Ingredients

Scale

1 cup rolled oats

1/2 cup unsweetened cocoa powder

1/2 cup nut butter (peanut, almond, or cashew)

1/3 cup maple syrup or honey

1/2 teaspoon vanilla extract

1/8 teaspoon sea salt

2 tablespoons mini chocolate chips (optional)

2 tablespoons shredded coconut or crushed nuts for rolling (optional)

Instructions

1. In a large bowl, mix rolled oats and cocoa powder until combined.

2. Add nut butter, maple syrup, vanilla extract, and salt. Stir until fully incorporated into a sticky dough.

3. If using, fold in chocolate chips.

4. Scoop about 1 tablespoon of dough and roll into balls using your hands.

5. Roll balls in shredded coconut, cocoa powder, or crushed nuts if desired.

6. Chill in the refrigerator for 30 minutes to firm.

7. Store in an airtight container in the fridge for up to one week.

Notes

Substitute oat flour for a smoother texture.

Add a scoop of protein powder for extra nutrition.

Use sunflower seed butter for a nut-free version.

Freeze for longer shelf life and enjoy directly from the freezer.
