Ingredients
1 lb lean ground beef
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup cherry tomatoes, halved
2 cups fresh spinach
1 small onion, finely chopped
3 garlic cloves, minced
1 tbsp olive oil
1 tsp dried oregano
1/2 tsp ground cumin
Zest and juice of 1 lemon
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Optional: crumbled feta cheese for topping
Instructions
1. Chop all vegetables and mince the garlic.
2. Heat olive oil in a skillet and brown the ground beef.
3. Add onion and garlic; cook until softened.
4. Add bell peppers and cook until tender.
5. Stir in cherry tomatoes, oregano, cumin, lemon zest, salt, and pepper.
6. Add fresh spinach and cook until wilted.
7. Finish with fresh lemon juice and garnish with parsley and optional feta.
8. Serve immediately with your choice of side.
