Golden, crispy zucchini slices pan-fried to perfection for an easy, healthy, and irresistible side dish.


Ingredients

2 medium zucchinis, sliced into 1/4-inch rounds

1/2 cup all-purpose flour

1 tsp garlic powder

1 tsp paprika

1/2 tsp salt

1/4 tsp black pepper

2 large eggs

1 cup panko breadcrumbs

1/4 cup grated Parmesan cheese (optional)

Olive oil or vegetable oil for frying


Instructions

1. Set up three bowls: one with flour, garlic powder, paprika, salt, and pepper; one with beaten eggs; and one with panko breadcrumbs and Parmesan.

2. Dip each zucchini slice in flour, then egg, then breadcrumbs, pressing gently.

3. Heat 2 tbsp oil in a skillet over medium heat. Fry zucchini slices in batches, 2-3 minutes per side, until golden and crispy.

4. Transfer to paper towels to drain excess oil.

5. Serve immediately with your favorite dipping sauce.

Notes

For extra crunch, use panko breadcrumbs instead of regular breadcrumbs.

To make it gluten-free, substitute almond flour and gluten-free breadcrumbs.
