Ingredients
4 boneless skinless chicken thighs or breasts
1 cup long-grain white rice

2 cups chicken broth

1 teaspoon dried thyme or Italian seasoning
Salt and pepper to taste

Instructions
1. Season chicken with salt, pepper, and thyme.
2. Heat olive oil or butter in a skillet over medium heat.
3. Brown chicken on both sides until golden, about 3-4 minutes per side, then remove.
4. Sauté onions and garlic in the same skillet until translucent.
