Ingredients
4 large carrots, peeled
2 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
Salt and pepper to taste
2 tablespoons chopped fresh parsley
1/4 cup toasted almonds (optional)
Instructions
1. Peel carrots into thin ribbons using a vegetable peeler.
2. In a small bowl, whisk olive oil, lemon juice, honey, salt, and pepper.
3. Toss carrot ribbons with dressing until well coated.
4. Add parsley and toasted almonds, toss lightly.
5. Serve immediately or chill for 30 minutes for flavors to meld.
Notes
Use toasted nuts of your choice for crunch.
For a vegan version, substitute honey with maple syrup.
