Ingredients
1 lb boneless skinless chicken thighs or breasts, cut into chunks
2 bell peppers, sliced
1 medium red onion, quartered
1 zucchini, sliced
½ cup mushrooms
2 tbsp olive oil
2 tbsp lemon juice
2 cloves garlic, minced
1 tsp smoked paprika
1 tbsp honey
2 tbsp soy sauce
Salt and pepper to taste
Instructions
1. Cut chicken and vegetables into even-sized pieces.
2. Combine olive oil, lemon juice, garlic, paprika, honey, soy sauce, salt, and pepper to make the marinade.
3. Marinate chicken pieces for 30 minutes to 4 hours in the fridge.
4. Soak wooden skewers in water for 30 minutes to prevent burning.
5. Thread chicken and vegetables alternately onto skewers.
6. Preheat grill to medium-high heat.
7. Grill skewers 2-3 minutes per side over direct heat to sear.
8. Move skewers to indirect heat and cook until chicken reaches 165°F (about 10 more minutes).
9. Let skewers rest for 5 minutes before serving.
Notes
Use metal skewers for easier handling and reusability.
You can bake skewers at 425°F for 15-20 minutes if no grill is available.
Try adding your favorite veggies like cherry tomatoes or mushrooms.
